Amyloglucosidase from Aspergillus niger is capable of hydrolyzing the ?-D-(1-4) and ?-(1,6) glucosidic bonds of starch and malto-oligosaccharides. Amyloglucosidase is an extracellular enzyme that converts starch to dextrins and glucose. The enzyme is used in the starch-processing industry in the commercial production of D-glucose from corn syrup.


General description


Amyloglucosidase, a 1,4-?-D-glucan glucohydrolase, is a disaccharidase–type ?-glucosidase. It is synthesized by several Aspergillus genus species. This exo-enzyme is one of the major industrial enzymes. The stability of amyloglucosidase can be increased by immobilization.
